What’s in your Chili?

Today it is a wintery mix of freezing rain, sleet, and giant flakes of snow. It’s the perfect day for a crockpot full of deliciousness!

What’s in your chili? Everyone has their own recipe I’d love to hear yours. Mine’s really simple.

Ingredients: ground beef, southern sausage, chili beans, kidney beans, tomato paste, diced tomatoes, minced garlic, chopped onion, diced red peppers, butter (to sauté onions, garlic, and peppers), and spices.*

Sauté the yummy stuff in butter then add meat to brown with the onions and whatnot. Sprinkle with spices while browning.

Add beans and tomato products to crockpot. Add more spices too. Add meat mixture. Let it cook for several hours.

What spices?

Oh nothing special, salt and pepper, chili pepper, Kinzey’s 3 pepper blend, and cloves.

Secret ingredients?

Ok, ok, half way through I might add some ketchup and a little mesquite flavor.

  1. 2 lb browned ground beef/venison.
    One diced yellow onion.
    4 cloves of garlic.
    olive oil.
    Brown and sauté together
    drain the fat off and return to pot.
    add, chili powder, cayenne, cumin, paprika, black pepper and salt. This is all estimates I don’t measure it.
    kidney beans one can light one can dark
    pinto beans
    sometimes a small can of corn.
    can of diced tomato’s
    can of tomato sauce.
    some Worcestershire sauce
    8 oz beef broth.

    Bring it all to a boil then reduce heat to a simmer and let it simmer for minimum of an hour. add additional spices as needed to get to the final flavor.

    I like to eat mine with a dollop of sour cream and some grated cheese. A nice piece of cornbread to sop the bottom of the bowl.
